Today, we got a request to start baking gluten-free cakes. Since our muffins already have a cake-like consistency, it wasn’t too difficult to come up with a chocolate cake recipe. In keeping true to muffin physics tradition, everything we make gets its start in form of a muffin (yes, even our early bread prototypes were baked in muffin cups). Below is a photo of our yummy chocolate cake:

I’m a bit stumped on what to use as a frosting that is dairy-free and soy-free though. Any suggestions?

Whole Foods Market in Hillcrest will be holding the first of their two Gluten Free Days on February 28th. There will be a speaker, Dr. Nicola McFadean, a DAN (defeat autism now) naturopathic doctor, whose presentation about the gluten-free and casein-free diet starts at 10 am. Following the talk, samples of gluten-free goodies will be offered throughout the store.

It is my hope to premiere our yeast-free, sugar-free, gluten-free, and always allergen-free (no wheat, dairy, eggs, soy, nuts, sulfites) sandwich loaf at the same time. I’m super excited about this bread because never before have we been able to make a sandwich in the morning then eat it 6 hours later, and all without having to toast it. If that isn’t revolutionary, I don’t know what is! So please mark your calendars! 

Oh, and our muffins will be there too!
